We seek stimulation. But every drug addict knows, after a while the "high" becomes normal and you need to take more than what you used to to get the same high. As everyone should know, because what we do is a milder, (sometimes) more socially acceptable, (sometimes) less destructive form of essentially the same thing. Whether you get your high from wealth, power or sex, or everyday things like food, music, tv, games.

For everyday stuff, our first foray into any field is most likely the most popular, common stuff. If it attracts us enough, we stay on and experience more of it. And lets face it, something popular earns a lot of money, and people will try and produce loads of stuff based on the same basic formula because the formula sells. If we stay on long enough we get bored of the common and seek out different styles. It is not that popular, common, formulaic stuff is inferior in any way, it's just that anyone who does something long enough to see the formulas has done it long enough to be bored of the formulas.

In the same sense I suppose, there is nothing good about good taste. It is merely something that is appreciated by less people, and mostly by the people who have done something long enough to get bored of everything else. In a culture where rarity and experience are valued, the appreciation of rarity becomes defined as "good".
